I would suggest picking UK and not US or else you have to deal with the different time and date formats. Changing the language in steam is about an 8GB download IIRC. I also found that when I switched the language to Japanese, the game exe was no longer the correct version, I could not get the Jp version to work with it - so heads up it may be the case for other languages. In the Skyrim.ini you have to open in MO2 (and not the skyrim.ini in My Document), you'll see something like [Archive] (I don't have the game installed anymore but I think it is correct) and you'll see a .bsa with your language.
